1.1 Basic Sponge
1.1.1 Introduction
Sponge Cake (not to be confused with a Butter Sponge Cake or Genoise) is sometimes used to refer to the whole category of foam or unshortened cakes, but it is rather a type of cake in itself. A Sponge cake is wonderfully versatile, and can be found with a multitude of recipes. Sponge cakes are leavened by whipping separated yolks and whites with sugar, resulting in air bubbles being trapped in its mixture.
1.1.2 Recipe
Ingredients:
Eggs | 4 |
Breakfast Sugar | 80 gms |
Flour | 80 gms |
Vanilla Essence | 1 tsp |
Method:
Whisk egg and breakfast sugar until it becomes very light and fluffy. Add vanilla essence and whisk again. Add flour and fold in the batter. Pour into lined cake tin and bake @ 150degree C for 15-20 minutes.
Yield: approx 400 gms
